Latex gloves, the most common, are made from natural rubber latex from rubber trees. Latex provides a comfortable glove for moderate protection. Some people are allergic to latex proteins which maybein the gloves. Latex gloves should not be worn during food preparation to prevent allergic reactions by sensitive individuals who might consumethe food. Nitrile gloves are made of synthetic, non-latex materials and are very durable. They provide greater protection against a larger range of chemicals and oils than do latex or vinyl gloves.
