Onions Offer Everyday Dishes Something Extra (NAPSA)—One easy way to add a zesty burst of flavor to any mealis to slice up an onion. The inexpensive and versatile vegetable offers subtle variations of its tantalizing flavor during different seasons. In spring and summer,theflavor of onions is milder as the vegetables have a higher water content, which is noticeable by their light-colored, thin skin. That difference may be deliciously evident in this warmweather meal—Stuffed Panini with Sauted Onions. To vary theflavor, caramelize or grill the onions. Stuffed Panini with Sauted Onions (Makes 4 servings) 2 medium to large onions, peeled and trimmed 3 tablespoonsolive or vegetable oil 4 to 8 ouncessliced deli chicken or shredded leftover chicken 1 large red bell pepper, halved, seeded andsliced or 1 large tomato,sliced 2 cups fresh spinach 4 seeded burger bunsor other large roundrolls 4 slices Swiss cheese Dry crumbledbasil, to taste (optional) Slice onions into rings and saut in oil over medium heat for 10-12 minutes or until tender.
